Healing Foods - Event Announcement

I am very excited to guest host the Healing Foods event for this month. This is a wonderful event started by Siri of Cooking with Siri. This is my first time hosting an event! I am glad to do this one because it is a great way to showcase healthy foods and recipes. I chose zucchini for my August guest host spot. Zucchini is very abundant right now as we are right in the height of summer and zucchini production in my area. Did you know that zucchini has many health benefits? Zucchini, and all summer squash, are great sources of magnesium, vitamin C, zinc, and other antioxidants. Summer squash are known for their anti-inflammatory properties, blood sugar regulation, and other healthful properties. 

  
Event guidelines:
1. Make any dish with zucchini as the main ingredient. Any dish with summer squash is welcome (zucchini, squash flowers, yellow squash, etc.). This dish should showcase the squash in a healthy recipe.
2. The dish can be any part of the meal, such as an appetizer, main course, dessert, sides, shakes, smoothies or in its raw or baked form. Only vegetarian entries, please, but eggs are allowed.
3. Please link to this page and Siri's Healing Foods event announcement page.
4. Any number of new entries posted in the month of August 2011 will be accepted. Archived entries are accepted if re-posted with a latest date in August. Maximum of two entries from archives please.
5. Use of logo is appreciated
6. The last date for the entries is August 31, 2011.
7. Please email the following details to savorymomentsblog[at]gmail[dot]com with subject line as "Healing Foods" -- Name, Blog Name, Recipe Name, Recipe URL, and Photograph.
8. Non-bloggers can also participate. Send in your recipe with a picture to the above email address.

Two lucky winners will be randomly selected from the entries received and be awarded the books. Myself and Siri are not eligible to participate in the random draw. Both the books will be shipped to any place in the globe - so there are no boundaries on who can participate and win the lovely treasures. (I won the second book in a past Healing Foods event and it is wonderful).
