Honey-cinnamon coconut snowballs


Today is the Winter Solstice and, luckily, we are just starting to get our first real snow of the season. I suppose the Solstice is a good day for the snow to pick. To celebrate the first snow of the season, I've made some coconut snowballs. These little treats are simple to make and they don't require you to turn on your oven. They are full of coconut goodness and lots of healthy fats. I found this recipe on The Kitchn and wanted to make it almost immediately. I changed the recipe to use honey instead of maple syrup, but otherwise kept it about the same. A lot of people were commenting that the recipe didn't work for them, or that they didn't get enough balls out the the mixture. I think that you have to be careful to get shredded coconut that is small like in the photo - not the longer strips that you often see in coconut desserts.

These little balls are really delicious. I made 13 balls from my batch and will be making another batch before Christmas comes. 

Honey-cinnamon coconut snowballs
1-3/4 cups unsweetened shredded coconut, divided
2 teaspoons unrefined coconut oil
3 tablespoons honey
2 tablespoons unsweetened coconut milk (I used full fat)
1/8 teaspoon fine sea salt
1/2 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract

Place one cup of coconut in a food processor along with the coconut oil. Blend on high until the coconut becomes a paste and sticks together. You'll need to stop and scrape down the sides a couple of times.

Add the honey, coconut milk, salt, cinnamon, and vanilla and blend until well-combined. Scrape down the sides of the food processor.

Add another 1/2 cup plus 2 tablespoons of coconut to the processor. Pulse until just combined.

Refrigerate the mixture for about 10 minutes. Then roll into about 1-inch balls and gently roll each ball in the remaining coconut. Repeat until all the mixture is gone. Refrigerate the balls to set for about an hour. Let come to room temperature before serving.

  6. I love these! I've never tried a treat quite like this and I love shredded coconut. Condensed milk always makes treats taste heavenly. My family would love this recipe!

  8. Yup, longest day of the year! Thank goodness it just gets "better" (as in more light) from here on...These little treats are perfect fodder for the holiday snow and for christmas parties! Looking at your snowballs, I feel like singing a christmas jingle now...

  9. Is there any specific reason for you to use coconut oil? Could I use olive oil instead? I love your recipe.

    1. I like coconut oil because it keeps with the taste of the balls, plus it solidifies when cool which helps them set. You could try olive - the flavor will be a little off (more fruity), but it will probably work.
