Peach and pecan streusel bread

Peaches and pecans come together in a moist and delicious quick bread that is perfect for peach season.

Peaches are so delicious when they are fresh and ripe during their short season. Peaches are best here in the mid- to late summer when they come into season along with other stone fruits like nectarines, apricots, and plums.

I love eating peaches fresh, but occasionally I like to use them in a recipe as well like in this quick bread where they are paired with pecans.

This recipe was inspired by some extra peeled and sliced peaches I had from a peach canning project. I had more peaches ready than jars, so I used them to create this bread.

Adding fresh peaches to a bread like this will create a very moist bread. When you put fresh fruit like this into a bread or muffin batter, the finished product won't last too long. So, this is best eaten the day it is made. 

Make this for a brunch or a mid-morning snack to have with friends or family along with a hot cup of tea or coffee. Sharing it will help ensure there are no leftovers.

On top of this bread is a streusel made with cinnamon and brown sugar. The streusel adds some extra texture to the bread and flavor that pairs well with the peaches and pecans. Streusel toppings are my favorite!

The batter also has cinnamon and ginger to add a bit of spice and both of those spices go well with peaches and pecans.

Peach and Pecan Streusel Bread

Peaches and pecans come together in a moist and delicious quick bread that is perfect for peach season.

Ingredients

for the bread
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup plus 2 tablespoons olive oil
  • 1/2 cup granulated sugar, preferably unbleached
  • 2 cups peeled and diced peaches
  • 1/2 cup finely chopped pecans
for the streusel
  • 2 tablespoons cold butter, cut into small cubes
  • 1/4 teaspoon ground cinnamon
  • 2 packed tablespoons brown sugar
  • 2-1/2 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 350 degrees. Lightly butter a 9"x5" loaf pan.
  2. First prepare the streusel by mixing all of the ingredients together in a small bowl. Then use your fingers to combine them and form small clumps. Place the bowl in the refrigerator.
  3. Whisk together the dry ingredients (flour through salt) in a medium bowl. In a large bowl, whisk together the egg, vanilla, oil, and sugar.
  4. Stir the dry ingredients into the wet until almost combined. Then gently stir in the peaches and pecans until just combined.
  5. Spoon into the prepared loaf pan and spread evenly. Sprinkle with the cold streusel.
  6. Bake until the top is golden and an inserted toothpick comes out cleanly, about 50-55 minutes.
  7. Let cool in the pan and then serve warm or at room temperature. The bread will be very moist around the peaches, so it's best to eat the day it is made.
