White chocolate pistachio pudding cookies

White Chocolate Pistachio Pudding Cookies are a delicious dessert or lunchbox treat. With their hint of green color, they also make a terrific cookie for the holidays.

If you like pistachios, you'll enjoy these delicious pistachio pudding cookies with white chocolate chips. These cookies are made with pistachio pudding mix which helps to make them moist and gives them a bit of green color. Chopped pistachios and white chocolate chips add extra flavor and texture.

If you haven't made pudding mix cookies before, I recommend giving them a try. The addition of instant pudding mix really makes moist, flavorful, and chewy cookies. 

Plus, pudding mix comes in a lot of different flavors so you can make cookies with all different flavors like pistachio. I've always been a fan of things like pistachio ice cream, and pudding, so these cookies are perfect for pistachio fans.

These cookies are great for anytime of the year. I really enjoy adding white chocolate chips to flavored cookies because they don't overpower the flavor like regular chocolate chips can. Plus, they add a nice sweet and creamy compliment to the cookies.

I like to add some chopped roasted and salted pistachios to the cookies as well. They add more pistachio flavor as well as a bit of crunch and texture and a little hint of salt. The hint of salt really makes these cookies more special as it compliments to sweet flavor.

Be sure to not over-bake your cookies to ensure they stay moist, soft, and chewy. Cooling on the baking sheet helps to set the cookies before transferring to the cooling rack.

These cookies can be stored for several days in an airtight container at room temperature. 

The recipe makes about three dozen cookies, so they are perfect for a party or potluck or to keep around for the holidays to share with your family and friends.

White Chocolate Pistachio Pudding Cookies

White Chocolate Pistachio Pudding Cookies

White Chocolate Pistachio Pudding Cookies are a delicious dessert or lunchbox treat. With their hint of green color, they also make a terrific cookie for the holidays.

Ingredients

  • 1-2/3 cups all-purpose flour
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 1 tsp baking soda
  • 1/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup white chocolate chips
  • 1/3 cup roughly chopped roasted and salted pistachios

Instructions

  1. Whisk together the flour through baking soda in a medium bowl and set aside.
  2. Cream together the sugars and butter until light and fluffy. Mix in the egg and vanilla until well-combined. Slowly mix in the dry ingredients until combined.
  3. Fold in the white chocolate chips and pistachios. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to overnight.
  4. Line two baking sheets with parchment paper and preheat the oven to 325 degrees.
  5. Place the dough in round tablespoons about 1-inch apart on the baking sheets. Slightly flatten with your fingers. Bake for 8-10 minutes, just until the edges start to turn a little golden. Remove from the oven and cool on the baking sheets for 5 minutes. Then place the cookies on a wire rack to fully cool. Repeat until all dough has been used.
  6. Store cooled cookies in an airtight container.

  5. I love to bake. I find it very therapeutic. However my waist line does not! My kids could always tell when I was having a bad day becaue it usually meant cookies on the counter! These sound fab!
