Hot chocolate pancakes

Chocolate buttermilk pancakes topped with mini marshmallows are a delicious and fun breakfast filled with the flavors of hot chocolate.

Calling all chocolate lovers! This rich and decadent recipe is for a sweet chocolaty breakfast treat for your family! 

Hot Chocolate Pancakes are lovely for the Christmas time holidays, Valentine's Day, or anytime you need a special breakfast for the chocolate lovers in your life. 

To me, these pancakes require a side of bacon or breakfast sausages to contrast all the sweetness. The salty bacon or sausage helps to not make this breakfast overly sweet.

They are also flexible -- you can tailor them to be like your favorite hot chocolate. I topped mine with mini marshmallows, powdered sugar, and real maple syrup. I love the contrast that the sprinkle of powdered sugar provides on top of the dark pancakes.

However, you can use hot fudge or chocolate sauce for extra decadent chocolaty goodness, add a touch of cinnamon to the batter or sprinkled on top, or put some peppermint extract in the batter for chocolate peppermint flavor.

Whatever you like in your hot chocolate can be added here to customize these pancakes. A pat of salted butter would add a nice contrast to the sweet chocolate pancakes, too.

These pancakes are a basic buttermilk pancake recipe, but with the addition of cocoa powder in the batter to give them a deep chocolate flavor.

Give these pancakes a try the next time you are craving some chocolate or have some guests for breakfast or brunch.

Hot Chocolate Pancakes

Chocolate buttermilk pancakes topped with mini marshmallows are a delicious and fun breakfast filled with the flavors of hot chocolate.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup baking cocoa powder
  • 1/3 cup granulated sugar (such as Imperial brand)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons unsalted butter, melted and slightly cooled, plus more for cooking
  • 1-1/4 cups buttermilk
  • mini marshmallows, for topping
  • powdered sugar, for topping (such as Imperial brand)
  • real maple syrup or chocolate sauce, for topping, optional

Instructions

  1. In a large bowl, whisk together the dry ingredients (flour through salt).
  2. In a medium bowl, whisk together the wet ingredients (eggs through buttermilk). Stir the wet ingredients into the dry until just combined.
  3. Heat a griddle pan or large cast iron skillet over medium heat. Grease with butter.
  4. Pour the batter about 1/4 cup at a time for each pancake, cooking in batches.
  5. Flip the pancakes when they are golden and begin to bubble and cook on the second side until golden and cooked through.
  6. Serve immediately with the toppings of your choice.

  8. oh wow hot chocolate pancakes??? Yes these sound incredible. I'm a chocoholic so I'm always looking for an excuse to eat chocolate for breakfast. I'm going to try these w' my GF flour mix and maybe thrown on some bananas. YUM! Thanks for sharing this recipe Amy!
