Roasted butternut squash hummus

This sweet, creamy, and flavorful roasted butternut squash hummus is perfect for dipping your favorite pita chips and vegetables for a delicious snack.

Hummus is always a great way to enjoy pita chips, raw vegetables, and even things like tortilla chips and pretzels. It a delicious and versatile dip that can be flavored in many ways.

Roasting up some cubed butternut squash until it is soft and sweet is a yummy way to change-up your hummus. Roasting the squash brings out the sweetness and adds a delicious flavor and color to a bowl of hummus.

I use butternut squash here, but you can use other sweet and firm orange fleshed winter squash such as a pie pumpkin, blue hubbard, kabocha, or honeynut squash if you prefer. 

You can use your favorite winter squash here, but we frequently have butternut around the house. Honeynut squash would make the hummus a bit sweeter, and a pie pumpkin would make it less sweet.

When you make hummus, you can make it thick or thinner depending on your preference. The blender or food processor you are using will influence the texture as well. If your hummus is not as thin or smooth as you would like, blend it longer and add a bit of cold water.

Butternut squash hummus can be used to dip things like crunch pita chips, soft warmed pita bread, and pretzels. It also is terrific with raw vegetables like carrots, bell peppers, cucumbers, and more. 

Dips are a terrific way to encourage kids and all people to eat more vegetables, too. Dips make it more fun and more tasty sometimes (and this particular dip contains vegetables in the dip itself). We always like to have veggies and dip around for snack.

Hummus platters make a delicious appetizer, light lunch, or a party snack. You can make one for a game day as well and add a bunch of your favorite items for dipping.

Roasted Butternut Squash Hummus

Roasted Butternut Squash Hummus

This sweet, creamy, and flavorful roasted butternut squash hummus is perfect for dipping your favorite pita chips and vegetables for a delicious snack.

Ingredients

  • 2 cups butternut squash that has been peeled and chopped into a small dice
  • 1 tablespoon olive oil
  • salt and pepper
  • 1 can (15-16 oz.) garbanzo beans (chick peas), drained and rinsed
  • 1/4 cup tahini
  • 1 garlic clove, chopped
  • 1-1/2 tablespoons fresh lemon juice
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon paprika, plus more for sprinkling

Instructions

  1. Preheat the oven to 450 degrees. Line a baking sheet with parchment paper. Toss the butternut squash with the olive oil and a good pinch of salt and grind of pepper.
  2. Place in the oven and roast for about 18-20 minutes, stirring halfway through, until it is soft and caramelized. Remove from the oven and let cool.
  3. When cooled, place in the food processor with the remaining ingredients. Add another pinch of salt and grind of pepper.
  4. Process on high until smooth and creamy. Add a little cold water to thin it out more, if desired. Taste and season as needed.
  5. Transfer to a serving bowl and sprinkle with more paprika (or cover and refrigerate until serving time).
  6. Serve with pitas wedges, pita chips, crackers, and/or fresh vegetables of your choice. Refrigerate leftovers in a covered container.

Notes

Other firm sweet winter squash like sugar pumpkin, kabocha, hubbard, etc. can be substituted.
