Beet lemonade

Sweet, tart, and a little earthy, beet lemonade is a delicious, colorful, and different drink for a hot summer day! 

If you enjoy lemonade and you like beets, this drink is one you need to try. It's so refreshing for a hot day or evening and lovely to enjoy on the patio with dinner.

Beets and lemons provide a nice contrast to one another. I love the earthy flavor of beets and the color they impart to this drink it just so pretty.

I had beet lemonade out at a restaurant once and then I knew I had to try to recreate it at home. I played around with it a little bit until I achieved the sweet-tart taste that I enjoy without the beet flavor overwhelming the drink. 

You can adjust this beet lemonade very easily by adding more or less sugar, more or less beet, and more or less lemon juice. You can also adjust the total amount of water you add by tasting and adjusting to your preferred flavor strength.

I like to use less water because I really enjoy the flavors, but you can dilute it more if you want if you find it be be too strong. You can also top it off with a bit of sparkling water for some bubbles and an extra refreshing quality. It's really up to your taste buds. 

Serve this beet lemonade with a cookout dinner like barbecue chicken, burgers, or steaks. Or, have this with some snacks like vegetables and dip, pretzels, and any other of your favorite summer snacks. It goes great with a lunch time salad, too.

And, as always when working with beets, remember that they can and will stain! Use caution or wear some disposable kitchen gloves when you are working with beets. I also like to use a plastic cutting board so they do not stain my wooden cutting boards.

Beet Lemonade

Beet Lemonade

Sweet, tart, and a little earthy, beet lemonade is a delicious and different drink for a hot summer day!

Ingredients

  • 1 medium beet, peeled and cut into chunks
  • 1/2 cup freshly squeezed lemon juice (about 4-5 lemons)
  • 1/2 cup sugar
  • about 4-6 cups fresh cold water
  • lemon slices and/or ice for serving, optional

Instructions

  1. In a food processor with the shredding blade, shred the beet (cut into pieces first if needed to fit into the food processor tube). You want to end up with about 1 lightly packed cup of shredded beets.
  2. Remove the shredding blade and put in the regular food processor blade. Blend together the beets, lemon juice, sugar, and 1 cup of water until smooth.
  3. Pour the mixture into a fine mesh sieve over a large glass measuring cup (or bowl). Use a spoon to push out as much of the liquid as you can. You should have about 2 cups of liquid.
  4. Pour the liquid into your serving pitcher and then add cold water until you reach your taste preference.
  5. Refrigerate until serving.
  6. Serve cold you lemon slices and/or ice, if desired.
